40g plain flour
1 tsp baking powder
25g cocoa powder
140g plain chocolate, broken into small pieces
3 medium eggs
225g castor sugar
1 tsp vanilla essence
80g mayonnaise
30g Stork Baking Margarine
55g walnuts, toasted and chopped
2 tbsp red food colouring gel

Step by step method

  1. Grease tray, set oven at 160ºC.
  2. Sift flour with baking powder and cocoa.
  3. Melt chocolate with the Stork Bake.
  4. In a large bowl, whisk eggs with sugar and vanilla until slightly thickened. Whisk in chocolate mixture and red food colouring.
  5. Fold in flour mixture, mayonnaise, and chopped walnuts.
  6. Pour into the prepared tray and bake for about 30 - 35 minutes.
  7. Leave to cool before cutting into squares.
