Ingredients

Main Ingredient Group

500ml flour
250ml Stork Baking Margarine
3ml salt
50ml iced water
15ml vinegar
1 egg yolk, keep egg white for glazing the pies later
500g minced fruit
1 Castor sugar to dust

Step by step method

  1. Rub the flour, Stork Bake and salt together in a food processor.
  2. Beat the egg yolk, water and vinegar together. Add to the dry ingredients, then process to form a soft dough.
  3. Wrap in cling wrap and place in the fridge until firm.
  4. Roll out thinly. Use a 10cm cutter to cut circles. Place into greased muffin trays. Fill each pastry round with a spoonful of fruit mincemeat. Wet pastry with water around the edges and place a second circle (7cm) on top. Press lightly to seal and then prick with a fork. Brush with the reserved egg white.
  5. Bake at 220°C for 10 - 15 minutes until light golden.
  6. Sprinkle with castor sugar while still hot.
