125g Stork Baking Margarine, softened
160g castor sugar
2 eggs, beaten lightly
500g self-raising wheat flour
125ml milk
15ml coffee (dissolve 3 tsp instant coffee in a little boiling water)
5ml undissolved coffee granules

Step by step method

  1. Preheat oven to 180°C.
  2. Combine Stork Bake, flour, castor sugar, milk, eggs, coffee granules and dissolved coffee in a bowl.
  3. Beat mixture until properly mixed.
  4. Spoon into a greased muffin pan and bake for about 20 minutes.
  5. Stand muffins in pan for a few minutes before turning onto wire rack.
