Cake Ingredients
185g Stork Baking Margarine
½ cup castor sugar
2 cups grated carrotÂ
½ cup chopped pecan nuts (optional)
1 ¾ cup flour
2 tsp baking powder
2 tsp mixed spice
1 tsp cinnamon
3 tsp No Egg Powder
Icing Ingredients
50ml softened Stork Baking Margarine
375ml icing sugar
4 tbsp smooth cream cheese
Roasted chopped pecan nuts, for topping
Step by step method
- Preheat oven to 180ºC. Grease a loaf tin.
- Cream Stork Bake and sugar until light and fluffy.
- Mix No Egg Powder with 6 tbsp water and add to creamed mix.
- Stir in grated carrots and nuts, then mix in the sifted flour, baking powder and spices.
- Spread in the loaf tin and bake for about 40 minutes or until skewer comes out clean.
- Beat all the ingredients together very well then spread on the cooled cake.
- Sprinkle with roasted chopped pecan nuts.
