Ingredients

Cake Ingredients

185g Stork Baking Margarine
½ cup castor sugar
2 cups grated carrotÂ
½ cup chopped pecan nuts (optional)
1 ¾ cup flour
2 tsp baking powder
2 tsp mixed spice
1 tsp cinnamon
3 tsp No Egg Powder

Icing Ingredients

50ml softened Stork Baking Margarine
375ml icing sugar
4 tbsp smooth cream cheese
Roasted chopped pecan nuts, for topping

Step by step method

  1. Preheat oven to 180ºC. Grease a loaf tin.
  2. Cream Stork Bake and sugar until light and fluffy.
  3. Mix No Egg Powder with 6 tbsp water and add to creamed mix.
  4. Stir in grated carrots and nuts, then mix in the sifted flour, baking powder and spices.
  5. Spread in the loaf tin and bake for about 40 minutes or until skewer comes out clean.
  6. Beat all the ingredients together very well then spread on the cooled cake.
  7. Sprinkle with roasted chopped pecan nuts.
