Boerewors & Caramelised Onion Pasta

Ingredients
250g pasta (e.g. orzo)
1 tbsp Stork Country Spread
2 large onions, thinly sliced
Leftover boerewors, sliced or crumbled
1 tbsp tomato paste
1 cup chicken stock
1⁄2 cup cream
1 cup grated cheese
Fresh spinach (a handful)
Salt & pepper, to taste
Step by step method
- 1. In a large pan, melt Stork Country Spread over medium-low heat. Add onions and caramelise slowly for 15–20 minutes until golden and soft.
- 2. Remove onions and set aside. Add tomato paste, salt, and pepper to the pan. Sauté for 5 minutes.
- 3. Add cooked boerewors and uncooked pasta.
- 4. Pour in the chicken stock, cover, and simmer on low for 15 minutes.
- 5. After 15 minutes, stir in spinach, cream, and grated cheese. Cover and simmer for another 5 minutes.
- 6. Serve hot and enjoy the comfort!
