Ingredients

Cupcake Ingredients

180g Stork Baking Margarine
2 large eggs
1 tsp vanilla
1 tsp salt
2 1/2 cups flour
1 1/2 cups sugar
2 tsp red gel food coloring plus 2 tbsp water
2 tbsp cocoa
1 cup buttermilk/natural yoghurt
3 tsp baking powder

Icing Ingredients

1 cup milk
1/3 cup flour
1 cup Stork Baking Margarine
1 cup granulated sugar
1 tsp vanilla
Milk/cream

Step by step method

  1. Preheat oven to 180ºC.
  2. Generously grease and flour a cupcake tray.
  3. Cream Stork Bake and sugar until light and fluffy.
  4. Add eggs and beat 1 minute longer.
  5. Beat in vanilla until blended.
  6. Combine cocoa, food coloring, and 2 tbsp water; beat into the egg creamed mixture.
  7. Combine flour and salt.
  8. Alternate adding flour and buttermilk/yoghurt mixtures to the batter, beating on low to medium speed.
  9. Add the baking powder to cake batter. Spoon batter evenly into the cupcake tray; bake for 20 - 25 minutes.
  10. Cool on cake racks before icing.
  11. In a saucepan, whisk together the 1/3 cup flour and milk (if you need to thin the frosting a bit, add 5ml at a time and beat until the desired consistency is reached) and cook, stirring, until thickened.
  12. Cool in the refrigerator. Beat Stork Bake, sugar and vanilla with mixer.
  13. Add flour and milk mixture a little at a time (make ahead of cupcakes so that it has plenty of time to cool).
  14. Beat well, adding milk or cream as needed.
  15. Ice the top of the cupcakes.
