1 1/4 cups plain flour
1 1/4 cups toasted muesli
1 tsp ground cinnamon
1 tsp bicarbonate of sodaÂ
1/2 cup firmly packed brown sugar
1/2 cup unprocessed bran
3/4 cup coarsely chopped dates
1 1/2 cups buttermilk
100g Stork Baking Margarine, melted
1 egg, beaten lightly
Step by step method
- Combine all ingredients in a bowl, stir until just combined. Cover and refrigerate overnight.
- Preheat oven to 180ºC, grease a 12 hole muffin tray. Divide mixture among the holes of prepared tray.
- Bake muffins for 20 minutes.
- Stand muffins in tray for a few minutes before turning them out onto a wire rack.
