150g Stork Baking Margarine
200g castor sugar
3 eggs
400 ml milk
400g all-purpose flour
180g polenta (yellow maize)
20g baking powder
5g salt
3g cayenne pepper
10g chives, chopped

Step by step method

  1. Preheat oven to 200ºC.
  2. In a mixing bowl with the paddle attachment, cream the margarine and sugar for 5 minutes.
  3. Mix together the eggs and milk in a jug.
  4. Mix together the flour, polenta, baking powder, salt, cayenne pepper and chives.
  5. Add the flour mix and the milk mix to the margarine and sugar mix. Beat until incorporated.
  6. Grease mini loaf tins.
  7. Pour the mixture into the loaf tins ¾ full and bake for 20 minutes or until fully cooked.
