Malva Pudding Ingredients

220g castor sugar
2 eggs
15 ml apricot jam
30g Stork Baking Margarine, melted
225g flour
5 ml Bicarbonate of Soda
125 ml milk
5 ml vinegar

Sauce Ingredients

250 ml cream
85g Stork Baking Margarine
100g castor sugar
10 ml apricot jam
Pinch of salt

To Serve

Custard, whipped cream or ice cream

Step by step method

  1. Preheat oven to 180ºC.
  2. Beat the eggs and sugar until light and fluffy – using a whisk attachment.
  3. Add the apricot jam and beat for another 30 seconds.
  4. Add the melted Stork Baking Margarine and milk.
  5. Add the flour and bicarbonate of soda to the wet mix, alternatively, until you have a batter.
  6. Lastly, add the vinegar and mix through.
  7. Lightly grease a baking dish.
  8. Pour batter into the baking dish.
  9. Bake in oven for 30 minutes until the cake is fully cooked.
  10. Sauce Method

  11. Place all the sauce ingredients in a pot and bring to boil, then keep warm, for when the Malva cake is ready.
  12. Remove the Malva cake from the oven. Poke holes with a skewer in the cake and pour boiling hot sauce over.
  13. Serve with custard, whipped cream or ice cream.
