Ingredients

250g pitted dates, chopped
5ml bicarbonate of soda
250ml boiling water
180g Stork Baking Margarine
375ml sugar
30ml golden syrup
2 eggs
15ml vanilla essence
780ml flour
15ml baking powder
125ml finely chopped nuts
Vanilla Cream Icing Ingredients
125g Stork Baking Margarine
375g icing sugar
25ml milk
Step by step method
- Place chopped dates and bicarbonate of soda in a bowl, pour over the boiling water. Leave to cool.
- Cream the Stork Bake, sugar and syrup until light and fluffy.
- Add one egg at a time, beating well after each addition. Beat in the vanilla essence.
- Stir in the flour, baking powder and nuts until thoroughly mixed.
- Lastly fold in the cooled date mixture.
- Spoon the mixture into a 23cm diameter greased and lined cake tin.
- Bake at 180°C for 50 - 60 minutes or until a skewer inserted into the centre comes out clean.
- Ice with vanilla cream icing, decorate with roses and dust with icing sugar.
- Beat the Stork Bake until soft and as white as possible.
- Gradually beat in half the icing sugar and half the milk.
- Beat in the remaining icing sugar and as much milk as needed to form an icing with a stiff but spreadable consistency.
