Ingredients

Main Ingredient Group

1000ml flour
1 Pinch of salt
150g Stork Baking Margarine
2 eggs
5ml vanilla essence
250ml sugar
250ml desiccated coconut
1 A little vegetable oil
1 Halved glace cherries and sugar for garnishing

Step by step method

  1. Sift flour and salt. Rub in Stork Bake until mixture resembles breadcrumbs. Beat eggs and vanilla essence. Add sugar a little at a time and beat until sugar is dissolved. Add coconut to flour and mix. Add this to egg mixture and mix to a dough that can be rolled out. Add a little oil if the dough is too stiff.
  2. Roll out to 10mm thickness. Cut into shapes with a biscuit cutter, sprinkle with sugar and place a halved cherry in the centre of each biscuit.
  3. Place on a greased baking tray and bake at 180°C until golden. Loosen biscuits and cool on a wire rack.
