Boerewors & Caramelised Onion Pasta

Ingredients

250g pasta (e.g. orzo)
1 tbsp Stork Country Spread
2 large onions, thinly sliced
Leftover boerewors, sliced or crumbled
1 tbsp tomato paste
1 cup chicken stock
1⁄2 cup cream
1 cup grated cheese
Fresh spinach (a handful)
Salt & pepper, to taste

Step by step method

  1. 1. In a large pan, melt Stork Country Spread over medium-low heat. Add onions and caramelise slowly for 15–20 minutes until golden and soft.
  2. 2. Remove onions and set aside. Add tomato paste, salt, and pepper to the pan. Sauté for 5 minutes.
  3. 3. Add cooked boerewors and uncooked pasta.
  4. 4. Pour in the chicken stock, cover, and simmer on low for 15 minutes.
  5. 5. After 15 minutes, stir in spinach, cream, and grated cheese. Cover and simmer for another 5 minutes.
  6. 6. Serve hot and enjoy the comfort!
