Ingredients

4 ripe bananas
1cup brown sugar
2 large eggs
125g Stork Baking Margarine, melted
5ml vanilla essence (or 1/2 vanilla bean)
1cup flour
125ml oats
125ml desiccated coconut
5ml bicarb of soda
5ml baking powder
5ml cinnamon

Step by step method

  1. Preheat oven to 180°C and line a muffin tray with muffin liners.
  2. Mash bananas then sugar and add to eggs, melted Stork Bake and vanilla in a medium bowl.
  3. Sift flour, bicarb, baking powder and cinnamon together in a large bowl. Add coconut and oats.
  4. Mix banana mixture with dry ingredients and mix completely.
  5. Spoon mixture into muffin tray. Bake for 15 - 18 minutes until golden brown.
