Sparkling Party Cheesecake

Main Ingredient Group

1packet ginger biscuits
3tbsp Stork Baking Margarine, melted
1cup cream
200g cream cheese
1tin condensed milk
0.5cup lemon juice
12 martini glasses
1 Edible glitter dust
12 Sparklers

Step by step method

  1. Place biscuits in a food processor and process until fine crumbs form. Stir in the melted Stork Bake and put 1 – 2 tablespoons (30 ml) in the bottom of each martini glass. Place in the fridge until you are ready to fill again.
  2. Place cream, cream cheese and condensed milk in a bowl and beat with an electric beater until it starts to thicken. Add in the lemon juice and beat again.
  3. Fill each of the martini glasses with the cream mixture and place in the fridge to set (at least 4 hours).
  4. When you are ready to serve, dust with glitter and put a sparkler in each and light.
  5. Serve immediately whilst still sparkling.
