Ingredients

Cake Ingredients

1 cup castor sugar
2 eggs
1 tbsp smooth apricot jam
1 1/4 cups cake flour
1 tsp bicarbonate of soda
A pinch of salt
2 tbsp Stork Baking Margarine
1 tsp vinegar
1/2 cup milk

Sauce Ingredients

1 cup whipping cream
1/2 cup Stork Baking Margarine
1/2 cup sugar
1/2 cup water

To Serve

Double thick cream or custard

Step by step method

  1. Beat the castor sugar and eggs until light and fluffy with an electric beater. Beat in the apricot jam.
  2. Sift dry ingredients three times.
  3. Melt the Stork Bake and add it to milk and vinegar.
  4. Fold milk mixture and dry ingredients alternately into egg mixture.
  5. Pour the batter into a greased casserole dish of about 30 x 25 cm or a 25cm square. Both about 8cm deep.
  6. Bake at 180°C for 45 minutes.
  7. Melt the sauce ingredients together and pour over the pudding as soon as it is taken out of the oven. Pierce the pudding with a fork to help it absorb all that delicious sauce.
  8. Serve hot with double thick cream or custard.
