Jaggery Sweet Meat

Ingredients

Main Ingredient Group

500g Stork Baking Margarine
1cup unsifted brown bread flour
2tbsp semolina
1cup coconut
0.5cup ground almonds
500g jaggery (palm sugar)
100g chopped pistachios
0.5tsp nutmeg
0.5cup milk or cream

Step by step method

  1. Heat 250g of the Stork Bake on moderate heat in a thick bottomed saucepan and gently stirfry the flour and semolina until aromatic.
  2. Add coconut and almonds and continue frying for 5 minutes longer. Remove from heat.
  3. Heat the remaining Stork Bake with the jaggery until it resembles a liquid.
  4. Add the pistachios, nutmeg and flour mixture.
  5. Mix in the milk (or cream) and pat the mixture into a deep tray (20 x 30 cm).
  6. Whilst still warm, mark into slices.
  7. Remove when cold.
