Ingredients
Main Ingredient Group
1000ml flour
1 Pinch of salt
150g Stork Baking Margarine
2 eggs
5ml vanilla essence
250ml sugar
250ml desiccated coconut
1 A little vegetable oil
1 Halved glace cherries and sugar for garnishing
Step by step method
- Sift flour and salt. Rub in Stork Bake until mixture resembles breadcrumbs. Beat eggs and vanilla essence. Add sugar a little at a time and beat until sugar is dissolved. Add coconut to flour and mix. Add this to egg mixture and mix to a dough that can be rolled out. Add a little oil if the dough is too stiff.
- Roll out to 10mm thickness. Cut into shapes with a biscuit cutter, sprinkle with sugar and place a halved cherry in the centre of each biscuit.
- Place on a greased baking tray and bake at 180°C until golden. Loosen biscuits and cool on a wire rack.
