Ingredients

250ml flour
5ml baking powder
125ml castor sugar
2 eggs, beaten
150g Stork Baking Margarine, melted
410g canned apricot halves, drained
5ml cinnamon
0 Apricot jam to glaze
Step by step method
- Preheat oven to 180°C and grease a 20cm round springform cake tin.
- Sift together the flour and baking powder, then add the sugar.
- Add the eggs and melted Stork Bake to the dry ingredients and beat well.
- Pour into a cake tin.
- Place the apricot halves, cut side up, on top of the mixture.
- Sprinkle with ground cinnamon.
- Bake for 40 - 45 minutes and then glaze with dollops of warm jam.
