Apricot Cinnamon Cake

Ingredients

Main Ingredient Group

250ml flour
5ml baking powder
125ml castor sugar
2 eggs, beaten
150g Stork Baking Margarine, melted
410g canned apricot halves, drained
5ml cinnamon
0 Apricot jam to glaze

Step by step method

  1. Preheat oven to 180°C and grease a 20cm round springform cake tin.
  2. Sift together the flour and baking powder, then add the sugar.
  3. Add the eggs and melted Stork Bake to the dry ingredients and beat well.
  4. Pour into a cake tin.
  5. Place the apricot halves, cut side up, on top of the mixture.
  6. Sprinkle with ground cinnamon.
  7. Bake for 40 - 45 minutes and then glaze with dollops of warm jam.
