Ingredients
Cake Ingredients (makes 2 sponges)
350g Stork Baking Margarine
350g castor sugar
350g self-raising flour, sieved together with 2 tsp baking powder
6 eggs, medium
6 6 level tbsp cocoa, blended with 6 tbsp hot water and cooled
110g white chocolate chips
Fudge Icing Ingredients
110g Stork Baking Margarine
5 dessert spoons milk
400g icing sugar, sieved
4tbsp cocoa powder
1 Chocolate cake decorations to finish
Step by step method
- Place all the cake ingredients apart from the chocolate chips in a mixing bowl and beat with a wooden spoon for 2 - 3 minutes or until well mixed.
- Place the mixture in two 20cm cake tins, previously lined with greaseproof paper and brushed with oil. Sprinkle with chocolate chips.
- Bake on the middle shelf of a preheated moderate oven 180°C, 160°C fan oven, Gas mark 4 for 25 - 30 minutes.
- Turn out and cool on a wire tray.
- Place all icing ingredients together in a bowl and beat together until smooth.
- Sandwich cakes together with some of the icing and spread remaining icing over the cake with a palette knife. Decorate with your choice of chocolate decorations.
