Crust Ingredients

120g Stork Baking Margarine, melted
250g chocolate biscuits, crushed (use a food processor)
Pinch of cinnamon
½ tsp coffee powder

Filling Ingredients

500g smooth cream cheese
2 eggs
½ cup sugar
½ tsp vanilla
1 tbsp cocoa
1 tsp instant coffee powder
225g dark cooking chocolate, chopped and melted
300g sour cream
45g Stork Baking Margarine, melted
Cream and chocolate for decorating

Step by step method

  1. Brush a 23cm round springform pan with oil. Line the base with baking paper.
  2. Combine melted Stork Bake, biscuit crumbs, cinnamon and coffee powder and mix well.
  3. Press the mixture into the base and up the sides of the pan, then refrigerate it.
  4. Beat the cream cheese until light and creamy.
  5. Slowly add the eggs, sugar, sifted cocoa, vanilla and coffee. Beat until well combined.
  6. With the mixer on low add the melted chocolate, sour cream and melted Stork Bake and mix until combined.
  7. Pour the mixture into the cooled shell and smooth the surface.
  8. Place on a shallow baking tray, as the cheesecake will leak a little into the tray.
  9. Bake at 180ºC for 45 minutes or until set.
  10. Cool and refrigerate for at least 6 hours before serving.
  11. Decorate with whipped cream and chocolate.
