Ingredients
Crust Ingredients
120g Stork Baking Margarine, melted
250g chocolate biscuits, crushed (use a food processor)
Pinch of cinnamon
½ tsp coffee powder
Filling Ingredients
500g smooth cream cheese
2 eggs
½ cup sugar
½ tsp vanilla
1 tbsp cocoa
1 tsp instant coffee powder
225g dark cooking chocolate, chopped and melted
300g sour cream
45g Stork Baking Margarine, melted
Cream and chocolate for decorating
Step by step method
- Brush a 23cm round springform pan with oil. Line the base with baking paper.
- Combine melted Stork Bake, biscuit crumbs, cinnamon and coffee powder and mix well.
- Press the mixture into the base and up the sides of the pan, then refrigerate it.
- Beat the cream cheese until light and creamy.
- Slowly add the eggs, sugar, sifted cocoa, vanilla and coffee. Beat until well combined.
- With the mixer on low add the melted chocolate, sour cream and melted Stork Bake and mix until combined.
- Pour the mixture into the cooled shell and smooth the surface.
- Place on a shallow baking tray, as the cheesecake will leak a little into the tray.
- Bake at 180ºC for 45 minutes or until set.
- Cool and refrigerate for at least 6 hours before serving.
- Decorate with whipped cream and chocolate.
