1 ¼ cup plain flour
1 ¼ cup toasted muesli
1 tsp cinnamon
1 tsp bicarbonate of soda
1/2 cup firmly packed brown sugar
1/2 cup bran
3/4 cup raisins
1 ½ cups buttermilk
100g Stork Baking Margarine, melted
1 egg, beaten lightly
1 tbsp honey
Step by step method
- Combine all ingredients in a large bowl and stir until just combined. Cover and refrigerate overnight.
- Preheat oven to 180ºC.
- Grease or line a 12 hole muffin tray or use paper cups.
- Divide the mixture between the 12 holes in the tray and bake for about 12 minutes.
- Stand muffins in the pan for a few minutes before removing and placing on a cooling rack.
