Ingredients

Koekies Ingredients

560g cake flour
200g white sugar
10ml cream of tartar
2.5ml salt
250g Stork Baking Margarine
5ml bicarbonate of soda
30ml milk
2 eggs
5ml vanilla essence
1 Optional extra: sugar / nuts / choc chips / royal icing

Icing Ingredients

2 eggs
5ml vanilla essence
4cups icing sugar
1 Food colouring (optional)

Step by step method

  1. Preheat oven to 180°C.
  2. Mix the flour, sugar, cream of tartar and salt together.
  3. Using your fingers, rub the Stork Bake into the flour mixture until it resembles fine breadcrumbs.
  4. Dissolve the bicarbonate of soda in the milk.
  5. Beat the eggs and add the vanilla essence.
  6. Add the bicarbonate of soda and beaten eggs to the flour mixture.
  7. Mix well to form a smooth dough.
  8. Cover the dough with plastic foil and place in fridge for 30 minutes (or longer).
  9. On a lightly floured surface (you can make this heavily floured if the mixture is too sticky), roll the dough out to 4mm thickness and press out with cookie cutter of your choice.
  10. Place on greased baking tray.
  11. Sprinkle each biscuit with a little extra sugar / nuts.
  12. Bake for 8 - 10 minutes until done. They will start to darken in colour.
  13. Leave to cool before getting stuck in.

  15. Beat two egg whites until fluffy.
  16. Add a teaspoon of vanilla essence and then slowly beat in 4 cups of icing sugar.
  17. You can also add a few drops of colouring to give it a pretty colour.
