3 cups flour
¾ cup sugar
1 tsp vanilla
400g Stork Baking Margarine
1 egg
½ tsp baking powder
½ - ¾ cup apricot jam / fruit mince

Step by step method

  1. Beat the egg with the sugar and vanilla.
  2. Rub Stork Bake into dry ingredients to form bread crumbs (can be done in a food processor).
  3. Add egg mixture and mix well.
  4. Press half the mixture into a greased pan.
  5. Spread the jam or fruit mince on top.
  6. Grate the rest of the dough over the top and gently press down.
  7. Bake at 180ºC until golden brown, approximately 25 minutes.
  8. Dust with icing sugar.
  9. Cut into the desired sizes and when cool, place on a wire rack until cold.
  10. Store in an airtight container.
