Ingredients

250g Stork Baking Margarine
1 tsp baking powder
½ cup icing sugar
225g cake flour
1 tsp vanilla
75g cornflour
Icing Ingredients
80g Stork Baking Margarine
110g icing sugar
1 tsp grated lemon rind
1 tsp lemon juice
Step by step method
- Preheat oven to 160ºC.
- Beat Stork Bake, vanilla, baking powder and icing sugar in a small bowl with an electric beater until light and fluffy.
- Stir in the flours in two batches, mix well.
- With lightly floured hands, roll into walnut sized balls and place about 3cm apart on a greased baking tray.
- Flatten slightly with a floured fork. Dip the fork into flour before each use.
- Bake for about 15 minutes or until biscuits are a pale straw colour.
- Cool in pan before putting on cake cooler.
- Beat all the ingredients together.
- Sandwich two biscuits together.
- When all are iced together, dust lightly with some sifted icing sugar.
- Store in an airtight container.They will keep for up to 10 days.
