3 cups flour
¾ cup sugar
1 tsp vanilla
400g Stork Baking Margarine
1 egg
½ tsp baking powder
½ - ¾ cup apricot jam / fruit mince
Step by step method
- Beat the egg with the sugar and vanilla.
- Rub Stork Bake into dry ingredients to form bread crumbs (can be done in a food processor).
- Add egg mixture and mix well.
- Press half the mixture into a greased pan.
- Spread the jam or fruit mince on top.
- Grate the rest of the dough over the top and gently press down.
- Bake at 180ºC until golden brown, approximately 25 minutes.
- Dust with icing sugar.
- Cut into the desired sizes and when cool, place on a wire rack until cold.
- Store in an airtight container.
