Ingredients
Cake Ingredients
500ml sugar
500ml vanilla extract
375ml Stork Baking Margarine, melted
60ml boiling water
4 eggs, separated
550ml cake flour
15ml mixed spice
15ml baking powder
1ml salt
375ml grated sweet potato, raw
100g macadamia nuts
Icing Ingredients
500ml icing sugar
60ml Stork Baking Margarine
250ml cream cheese
10ml mixed spice
To Decorate
50g chopped caramelized macadamia nuts
Step by step method
- Beat the sugar, vanilla and Stork Bake.
- Add the water and egg yolks, beat.
- Add sieved flour, mixed spice and baking powder.
- Mix well and add the sweet potato and the nuts.
- Beat the egg whites and salt until stiff and fold into above mixture.
- Bake in two well greased 24cm cake tins at 180°C for 40 minutes.
- Mix ingredients together, divide equally on the two sponges.
- Place one on top of the other and decorate with 50g chopped caramelized macadamia nuts.
