Ingredients
½ cup Stork Country Blend
1 Lemon, halved
2 TBSP Fresh lemon juice
2 TBSP Rosemary sprigs, chopped
1-2 cloves Garlic, minced
½ tsp Salt
¼ tsp Black pepper, freshly ground
Step by step method
- Make sure your Stork Country Blend is at room temperature so it’s easy to blend with the other ingredients. Chop your fresh herbs finely, then mince the garlic.
- In a bowl, combine the softened Stork Country Blend with the chopped rosemary, garlic, salt, pepper then stir together until well mixed.
- Carefully loosen the skin of the chicken by gently sliding your fingers between the skin and the meat (especially on the breasts and thighs).
- Take some of the garlic mixture and rub directly onto the meat underneath the skin - this helps keep the chicken moist and infuses it with flavour.
- Squeeze lemon juice over the chicken skin then place the half lemon in the cavity of the chicken.
- Spread any remaining garlic mixture over the chicken skin.
- Roast the chicken according to your preferred method. A typical roasting time is about 20 minutes per 500g at 220°C, but be sure to check the internal temperature is 75°C when the chicken is fully cooked.
- Top with fresh rosemary and another squeeze of lemon. Enjoy!
