GAMMON GLAZE

Ingredients
½ cup Stork Country Blend
¼ cup Brown sugar
2 TBSP Dijon mustard
2 TBSP Apple cider vinegar
¼ tsp Ground cinnamon (optional)
Salt and pepper to taste
Step by step method
- 1. In a small saucepan, melt the Stork Country Blend over medium heat until it’s completely melted and starting to bubble slightly.
- 2. Stir in the brown sugar and continue to cook for 2-3 minutes, stirring frequently until the sugar has dissolved and the mixture is smooth.
- 3. Whisk in the Dijon mustard and apple cider vinegar - the vinegar adds a nice tang to balance the sweetness.
- 4. If you're using cinnamon, add them in now as well for a deeper flavour profile.
- 5. Let the glaze simmer for 5 - 7 minutes, allowing it to thicken slightly - stir occasionally to ensure it doesn't burn or stick to the bottom of the pan.
- 6. Season to taste - the mustard and vinegar should give it a nice tang, but if you prefer it sweeter, you can add a bit more brown sugar.
- 7. If you're glazing a gammon roast, brush the glaze generously onto the gammon during the last 30 - 45 minutes of cooking - baste every 10 - 15 minutes to get a caramelised coating. Enjoy!
