Ingredients

½ cup Stork Country Blend
¼ cup Brown sugar
2 TBSP Dijon mustard
2 TBSP Apple cider vinegar
¼ tsp Ground cinnamon (optional)
Salt and pepper to taste

Step by step method

  1. 1. In a small saucepan, melt the Stork Country Blend over medium heat until it’s completely melted and starting to bubble slightly.
  2. 2. Stir in the brown sugar and continue to cook for 2-3 minutes, stirring frequently until the sugar has dissolved and the mixture is smooth.
  3. 3. Whisk in the Dijon mustard and apple cider vinegar - the vinegar adds a nice tang to balance the sweetness.
  4. 4. If you're using cinnamon, add them in now as well for a deeper flavour profile.
  5. 5. Let the glaze simmer for 5 - 7 minutes, allowing it to thicken slightly - stir occasionally to ensure it doesn't burn or stick to the bottom of the pan.
  6. 6. Season to taste - the mustard and vinegar should give it a nice tang, but if you prefer it sweeter, you can add a bit more brown sugar.
  7. 7. If you're glazing a gammon roast, brush the glaze generously onto the gammon during the last 30 - 45 minutes of cooking - baste every 10 - 15 minutes to get a caramelised coating. Enjoy!
